At Niche we work to create a menu of humble ingredients and serve them in a way that shows their real potential.

To take the common and remind you how beautiful it can be. We look to the past to see what was here long before us and we look to the future to see what might be possible. As chefs we are never satisfied and always evolving. We are more in awe of a carrot or potato, grown by one of our trusted farmers, than we are by a white truffle flown in from Italy. To us, this is what defines cooking in Missouri.

Anything I get to make and eat with my family.

Favorite Ingredient

Oats. They are so simple, yet have such complex flavor. I think they can paint a tremendous picture.

Least Favorite Ingredient

Cheez-it’s, or ketchup.

Why Do You Love Missouri

There are so many hidden gems here. The Ozark Hills, the rivers, the woods, the farmlands, and the cities. I love Missouri for its awesome pace of life, great people, history, & lots of treasured open spaces.

There are things I have not worked with much, but nothing I would consider my least favorite.

Why Do You Love Missouri

Even after living here most of my life I am still amazed what I learn about it each passing year, and how I can translate our history into the food.

Favorite Dish to Cook at Home

Chicken soup. It lends itself to being composed of whatever vegetables I have in the garden or in the fridge.

Tartine Bread, The Zuni Cafe Cookbook, The Art of Fermentation

Favorite Ingredient

Naturally leavened bread. Cooking with bread is very versatile.

Least Favorite Ingredient

Eggplant. It’s a total drag.

Why Do You Love Missouri

Missouri has just enough variety and length of growing season to keep you interested for the whole year. Add on that it is very scenic and full of natural diversity.
